Ingredients

• 4 pounds beef shank bones
• 1 medium onion, peeled and halved
• 2-inch piece fresh ginger, peeled and halved
• 3 garlic cloves, whole
• 1 tablespoon Chef Paul Prudhomme’s Vegetable Magic®
• 1 tablespoon Kosher salt
• ¾ teaspoon ground star anise
• ¾ teaspoon ground cinnamon
• ¾ teaspoon ground clove
• 7 cups water
• 1-pound beef round steak, cut into 2 pieces
• 1 tablespoon lime juice
• 1 tablespoon fish sauce
• 2 tablespoons brown sugar
• 2 tablespoons hoisin sauce
• 1 tablespoon sriracha sauce
• ½ small onion, thinly sliced
• 1 small jalapeño, thinly sliced
• 2 tablespoons chopped cilantro
• ½ pound flat rice noodles, cooked according to package directions
