• Pinch salt
• ½ cup pitted dried dates, coarsely chopped
• ½ cup prunes, coarsely chopped
• 1 cup red glace cherries
• 100g glace ginger, coarsely chopped
• 1 cup unsalted pistachio kernels
• 1 cup unsalted roasted macadamias, coarsely chopped
• ⅓ cup honey
• ⅓ cup caster sugar
• ⅓ cup, firmly packed brown sugar
• 2 tablespoons water
• 1 teaspoon natural vanilla extract
• Icing sugar, to dust
