Ingredients

• 3/4 cup white raisins
• 1/3 to 1/2 cup dry sherry
• 8 cloves garlic
• 1/2 cup chopped flat-leaf parsley
• 1 cup shelled pistachio nuts
• 12 to 15 pound fresh ham, boned, rolled, and well tied
• 1 teaspoon crushed dried sage
• Coarse salt and freshly ground black pepper
• 6 tablespoons unsalted butter
• 1/3 cup apple jelly
• 1 teaspoon aniseed, crushed (optional)
