Ingredients

• 1 16-ounce bags dried blackeyed peas (or 4 15-ounce cans)
• ½ 16-ounce bag dried black beans (or 2 15-ounce cans)
• 2 cups corn
• 1 cup red onion, minced
• 1 green bell pepper, diced
• 1 red bell pepper, diced
• 1 jalapeño pepper, seeded and diced
• 5 cloves garlic, minced
• ¼ cup cilantro, minced
• 3 scallions, sliced thinly
• 8 tablespoons olive oil
• 4 tablespoons red wine vinegar
• 4 teaspoons kosher salt
• 2 teaspoons pepper
• 4 lemons, juiced
