Catfish Paella – TCI

Ingredients

• 2 U.S. Farm-Raised Catfish fillets, cut in half lengthwise
• 4 cups chicken stock
• 1 teaspoon saffron
• 1 teaspoon salt
• 2 tablespoons olive oil
• 1 medium-sized onion, finely chopped
• 1 red bell pepper, finely chopped
• 2 tablespoons finely chopped garlic
• ½ pound chorizo sausage, sliced
• 3 cups Bomba rice or paella rice
• 1 (15-ounce) can fire-roasted diced tomatoes
• 1 pound shrimp, tail on
• ½ pound mussels, cleaned
