Meatballs with Mint & Parsley in Tomato Sauce

Ingredients

• 2 large eggs
• 1/4 cup of finely chopped mint leaves, plus more to serve
• 1/4 cup of finely chopped flat leaf parsley
• kosher salt and freshly ground pepper, to taste
• 1/3 cup of Panko breadcrumbs
• 1 1/2 teaspoons of freshly grated nutmeg
• 1 28 ounce can of diced tomatoes
• 2 cloves of garlic, minced
• 2 sprigs of thyme
• 1/2 teaspoon of red pepper flakes
• 4 tablespoons of olive oil
