Ingredients

• 2.5kg smoked gammon joint, tied
• 2 onions , skin on, halved
• 2 bay leaves
• 1 thyme sprig
• 2 carrots , roughly chopped
• 6 cloves
• 8 black peppercorns or 1 tsp pink peppercorns, if you have them
• 100g honey
• 3 tbsp hot sauce
• 1-2 tsp chilli flakes
