Ingredients

  • 6 cups of water
  • 4 dried shiitake mushrooms
  • 2 pieces dried kombu seaweed, appx 4 inches square
  • 1 pound of fresh shiitake mushrooms, stems* removed, sliced
  • 1 celeriac, peeled and cut into bite-sized pieces
  • 1 leek, quartered lengthwise and cut into 1/2 inch slices
  • 1 large carrot, halved lengthwise and cut into 1/2 inch slices
  • 1/4 cup of sake
  • 1/4 cup of mirin
  • 2 tablespoons of soy sauce
  • 1 tablespoon of Okinawan Brown Sugar
  • 1/4 cup of Jorinji white miso
  • *woody shiitake stems are tough, but they can be chopped very fine and added to the soup
