• ¼ red onion, finely sliced
• 1 tsp soft brown sugar
• 2 tsp balsamic vinegar
• 2 figs, halved
• 2 tbsp clear honey
• 55g/2oz butter, melted
• 1 tsp shelled walnuts, crushed
• 1 free-range egg white
• 4 sheets ready-made filo pastry, cut into 25cm/10in circles
• 30g/1oz Stilton, crumbled
