Spicy, garlicky, lemony, herby sardines on toast from Solo by Signe Johansen

Ingredients

• 1 sprig of parsley, leaves finely chopped
• 1 tsp fresh oregano leaves
• a few ripe tomatoes, sliced
• 1 x 80–85 g tin of sardine piccanti (spicy sardines)
• olive oil or butter (optional)
• grated zest and juice of ¼ unwaxed lemon
• 1 garlic clove, peeled and halved
• 1 long slice of sourdough bread or 2 smaller slices of regular-sized bread
