Ingredients
- For the carrot cake
- 4 to 5 medium carrots, peeled
- 3 cups all-purpose flour
- 1 tbsp baking soda
- 1 tbsp ground cinnamon
- 2 cups granulated sugar
- 1 tsp salt
- 1 1/2 cup vegetable oil
- 4 large eggs, lightly beaten
- 1 tbsp vanilla extract
- 1 1/2 cup walnuts (chopped)
- 1 cup shredded coconut
- 8 oz can crushed pineapple (225 g; drained)
- 1/3 cup brandy
- For the cream cheese frosting
- 12 oz Mascarpone cheese (350 g; at room temperature)
- 8 tbsp unsalted butter at room temperature
- 3 cups icing sugar (sifted)
- 1/2 cup chopped walnuts for garnishing (optional)
