ONE PAN CHICKEN & POLENTA - Manitoba Chicken

Ingredients

• 2 Tbsp (30 ml) olive oil
• 1 onion, minced
• 4 cloves garlic, minced
• 4-6 cremini mushrooms, thinly sliced
• 1 lb (450 g) boneless skinless chicken thighs, thinly sliced
• 1/2 tsp (2.5 ml) EACH salt and pepper
• 1 Tbsp (15 ml) dried oregano
• 1/2 cup (125 ml) wine (red or white)
• 1 can (796 mL) diced tomatoes
• 2 bay leaves
• 1 1/2 cups (375 ml) shredded Mozzarella cheese
• 1 cup (250 ml) grated Parmesan cheese
