• 2 cups All-purpose flour

• 1 cup quick 1 minute oats
• 1 (3.4oz.) box Instant vanilla pudding mix
• 2 tsp. cornstarch
• 2 tsp. cinnamon
• 1 tsp. baking soda
• 1 tsp. baking powder
• 1 tsp. salt
• 1/2 tsp. nutmeg
• 1 cup unsalted butter, cold
• 1 cup brown sugar (packed)
• 1/4 cup granulated sugar
• 2 large eggs
• 2 large egg yolks (no whites)
• 2 tsp. vanilla extract
• 1 cup finely grated carrots (about 2 large carrots)
• 8 oz. cream cheese, softened
• 8 Tbsp. unsalted butter, softened
• 2 cups confectioners sugar
• 1 1/2 tsp. vanilla extract
• pinch of salt
