• 1 kg beef, cut in portions (35 oz.)
• 3 tbsps olive oil
• 3 carrots, peeled and cut in slices
• 2-3 sticks celery, cut in slices
• 2 white onions, finely chopped
• 2-3 bay leaves
• 3 medium potatoes, peeled and cut in cubes
• 1 tbsp fresh thyme, chopped
• 1 beef bouillon cube
• salt and freshly ground pepper
• juice of 1 lemon
• zest of 1 lemon
