Ingredients

• 1 small Red onion halved
• 1 1/2 pound tomatillos husked and rinsed
• 2 Serrano chiles stemmed and seeded
• 1/2 cup Low sodium chicken broth
• Kosher Salt
• pinch Granulated sugar
• 8 corn tortillas
• 3 cups Chicken breasts boneless and skinless shredded
• 2 1/2 cups Monterey jack cheese shredded
• 1/3 cup Fresh Cilantro chopped
• 2 tbsp Extra virgin olive oil
• 3/4 cup queso fresca OR feta cheese crumbled
