• 1 small onion, sliced

• 8 cups vegetable broth
• ½ cup white miso paste
• ¼ cup hot water
• 4 ounces shiitake mushrooms, thinly sliced
• 4 cups baby spinach
• 1 cup bean sprouts
• 1 bunch scallions, sliced
