Carrot Cake recipe by Naseema Zulfi Khan

Ingredients

• 1 Cup Oil
• 1 & ½ Cups of Sugar
• Add
• 3 Eggs
• Add in 2 Grated Carrots
• Handfull Chopped Pecans Nuts
• 1 cup Dessicated Cononut
• 1 heaped teaspoon Cinnamon Powder
• ¾ teaspoon Mixed Spice
• ½ teaspoon salt
• ¾ teaspoon Bicarb
• 2 Heaped teaspoon Baking Powder
• Add +- 1 & ½ Cups of Flour
• Add ¼ Cup Hot water
• (If Muffins either Square Or Rounds
• At this stage you can either Sprinkle More Pecans and Or Almonds on top
• Cream cheese icing
• Sprinkle again Pecans or Almonds over the Icing
