Bagoong is a family of salty Filipino fermented condiments. Bagoong alamang is made from small shrimp or krill; bagoong isda is made from fish. Versions may be sold fermented but uncooked, or already sautéed and seasoned.
It supplies savory depth to dishes such as pinakbet and is also served as a condiment. The different varieties are not identical substitutes. Follow the label's cooking and storage instructions and note the fish or shellfish allergens.
