Garlic Chips

Techniques

Garlic chips, also called fried or crispy garlic, are thin slices or minced pieces of fresh garlic that are deep-fried, pan-fried, or oven-baked until golden brown and crunchy; the high heat caramelizes the garlic's natural sugars into a sweet, nutty flavor. They are widely used in Thai, Vietnamese, and other Southeast and East Asian cooking as a topping or garnish for stir-fries, curries, rice dishes, and salads, and have since become popular elsewhere on soups and pasta. Watch the frying closely - garlic goes from golden to bitter within seconds once it starts to brown.
