- 2 carrots, chopped
- 1 large onion, finely chopped
- 1 litre vegetable stock
- 400g tin chopped tomato
- 200g frozen peas
- 250g pack fresh filled tortellini (Spinach and Ricotta works well)
- handful of basil leaves (optional)
- grated parmesan, to serve
