Ingredients

  • 1½ teaspoons salt
  • 375 ml (13 fl oz/1½ cups) lukewarm water (or 400 ml/14 fl oz if you add the wheat gluten, see note)
  • 3 teaspoons salt
  • 1½ teaspoons dried yeast
  • 1½ tablespoons olive oil
  • 2 tablespoons malt syrup or sugar syrup
  • 3 teaspoons malt syrup or sugar syrup
  • 3 litres (105 fl oz/12 cups) water
  • 3 teaspoons potato starch
  • 750 g (1 lb 10 oz/5 cups) strong flour
  • sesame seeds and poppy seeds are the most traditional, but you can experiment with other things
