Ingredients

  • 4 cups (1 l) Basic Chicken Stock or commercial chicken broth
  • 1 cup (250 ml) buttermilk
  • 3 cloves garlic, smashed, peeled, and very finely chopped
  • ¼ teaspoon ground turmeric
  • 2 teaspoons vegetable oil
  • ¼ teaspoon ground mace
  • ¼ teaspoon cayenne pepper
  • 2 small acorn squash, halved, peeled, seeded, and cut into 2-inch (5-cm) chunks
  • 2 to 3 teaspoons kosher salt, or less if using commercial broth
  • Freshly ground black pepper, to taste
