Instant Pot Shredded Beef Enchiladas Recipe (EASY)

Ingredients
- 3-4 lb Boneless beef chuck roast
- 2 Tablespoons olive oil
- salt and pepper (to taste)
- 1 onion (diced)
- 2 cups beef broth
- 1 cup salsa
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 cans enchilada sauce (10 ounces each)
- 10-12 flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
