Strawberry Rhubarb Pie Bites | Pie Eyed Love

Ingredients

• 1 recipe pie dough for a double 9 inch crust
• 2 cups rhubarb diced about 1/2 inch thick
• 2 cups strawberries quartered
• 1/4 cup light brown sugar
• 1 tablespoon strawberry Jello-O Optional, but adds a little pop of flavor
• 2 tablespoons cornstarch
• 1 teaspoon fresh lemon juice A squeeze of half a lemon works
• 1/2 teaspoon ground cinnamon
• 1 teaspoon pure vanilla extract
• Preheat oven to 400
