Pink Velvet Cupcakes recipe by Fatima Latib

Ingredients

• 2 & ½ cups cake flour
• 2 tablespoons cocoa powder
• 1 teaspoon salt
• 1 & ½ cups Sugar
• 1 & ½ cups veg oil
• 2 large Eggs
• 1 teaspoon vanilla essence
• 1 cup buttermilk
• 1 & ½ teaspoons baking soda
• 2 teaspoons vinegar
• 1. Pre – heat Oven 180°
• 2. Mix all ingredients together in mixer.
• 3. Fill batter into cupcake cases ¾ full
• 4. Bake for about 20min
• Cream cheese icing
• 125g butter
• 1 tub cream cheese
• 2 tablespoons milk
• 1kg icing sugar
• Add in cream cheese, milk and vanilla essence and beat till well mixed.
