Microwave Red Curry Poached Salmon Recipe
This quick and easy weeknight meal of salmon gently poached in a Thai-inspired red curry is made in the microwave and can be made in under 30 minutes.
Ingredients
- 2 tablespoons vegetable oil
- 1 small shallot, roughly chopped
- 2 tablespoons chopped fresh cilantro leaves and tender stems, plus more for garnish
- 1 small jalapeño pepper, seeds removed
- 1 small stalk lemongrass, roughly chopped
- 1 1-inch piece fresh ginger
- 1 (14-ounce) can full-fat coconut milk, well-shaken
- 1 tablespoon red curry paste
- 2 teaspoons light brown sugar
- 3/4 teaspoon kosher salt, divided
- 1 tablespoon fresh lime juice (from 1 lime)
- 4 (4-ounce) skinless salmon filets
