Ingredients

• 1 1/2 tablespoons olive oil
• 1 cup onion, coarsely chopped
• 1 large clove garlic, coarsely chopped
• 1 tablespoon fresh ginger, coarsely grated
• 1 teaspoon ground cumin
• 1/2 teaspoon ground coriander
• 1/4 teaspoon ground cardamom
• 1/4 teaspoon tumeric
• 1/8 teaspoon crushed red pepper flakes
• 2 1/2 pounds sweet potatoes, peeled and sliced 1/4 inch thick
• 6 cups chicken broth, or as needed
• salt and freshly ground black pepper
• 6 to 8 teaspoons fresh cheese
