Haitian Pork Stew (Griots)

Ingredients

• 10 lb. boneless pork loin (one whole loin)
• 1/2 cup mild olive oil
• 2 large yellow onions, chopped (5 cups)
• 1 1/4 cups chopped shallots (3 shallots)
• 1 1/4 cups fresh lime juice (10 limes)
• 2 cups fresh orange juice (15 oranges)
• 1 cup water
• 2 t. ground black pepper
• 1/2 t. chili powder
• 1/2 t. dried thyme
• 1 1/2 t. sea salt
