Sweet and Sour Pork

Ingredients

• 1/2 lb pork loin, cut into 1 inch cubes
• 1 T. olive oil
• 1 clove garlic, minced
• 1 bell pepper, sliced
• 4 green onions, cut in 2-inch lengths.
• 1 t. ginger
• 1 tomato, chopped
• 8 oz. can of pineapple chunks
• 1 T. low-sodium soy sauce
• 1 T. oyster sauce or hoisin sauce
