Vegetarian Paella Recipe for Crohn's and Ulcerative Colitis

Ingredients
- 1/4 cup plus 2 tbsp. extra-virgin olive oil, divided
- 1 yellow onion, finely chopped
- 1 red bell pepper, thinly sliced
- 8 oz. cremini mushrooms, sliced
- 3 garlic cloves, minced
- 1/2 tsp. paprika
- 1 tsp. saffron threads*
- 1 tsp. kosher salt
- 1/2 tsp. black pepper
- 1 cup dry white wine**
- 1 1/2 cups dry short-grain white rice
- 1 (15-oz.) can chickpeas, rinsed and drained
- 1 (15-oz.) can diced fire-roasted tomatoes
- 2 1/2 cups vegetable broth
- 1/2 cup frozen green peas, thawed
- 1/4 cup finely chopped fresh parsley
- Zest and juice of 1 lemon
- 1/3 cup sliced green olives, optional
