Ingredients

• 1/2 tsp gelatin
• 1 tbsp (15 ml) cold water
• 2 tbsp sugar
• 2 tsp cornstarch
• 1 egg
• 1 clementine, zest finely grated
• 1/3 cup (75 ml) clementine juice
• 1 tbsp (15 ml) lemon juice
• 1/4 cup (60 ml) 35% whipping cream
• 16 store-bought ginger cookies (see note)
