- 4 stalks lemongrass, bruised and roughly chopped
- 2 cups water
- ¾ cup caster sugar
- Juice of 1 lemon
- Juice of 1 lime
- For the Lemon Myrtle Meringues
- 3 egg whites
- ½ tsp cream of tartar
- ¼ tsp vanilla extract
- Pinch of salt
- ¼ tsp ground lemon myrtle
- Edible flowers to garnish, optional
