Jackfruit tacos recipe

Ingredients

• 2 x 400g/14oz cans green jackfruit in brine, drained and rinsed
• 1 tbsp olive oil
• 1 red onion, chopped
• 4 garlic cloves, crushed
• 1 chipotle pepper, chopped
• 1 tsp ground cumin
• 0.5 tsp dried oregano
• 1 –2 tbsp adobo sauce
• 1 tbsp tomato purée (paste)
• 8 soft flour tortillas
• 8 handfuls shredded crisp lettuce, e.g. cos (romaine)
• 3 tbsp soya or coconut yoghurt, to serve
• 1 lime, cut into wedges
