Ingredients

  • 6-8 Slices brioche (cut into 2″ cubes)
  • 300g Rhubarb
  • 350ml Milk (1 1/2 cups)
  • 150ml Cream (3/4 cup)
  • 3 Eggs, beaten
  • 2tbsp Butter + more for greasing
  • 75g Caster sugar (1/3 cup)
  • 50g Light brown sugar + more for sprinkling
  • 2tsp Vanilla extract
  • Pinch of salt
