• 2 tablespoons butter

• 4 tablespoons flour
• 2 cups milk, plus more if needed
• Pinch salt
• white pepper
• pinch nutmeg
• 6 ounces grated Emmenthaler or Jarlsberg cheese
• 1 cup spinach, lightly chopped
