Leftover Christmas Turkey Tray Bake Recipe - Farmison & Co

Ingredients

• 750g sweet potatoes peeled and cut 1 inch chunks
• 500g butternut squash peeled and cut 1 inch chunks
• 400g picked cooked leftover Christmas turkey meat (white & brown)
• 1bunch spring onions cut on the angle
• 2 tsp. sweet paprika
• 1 tsp. ground cumin seed
• 1 tsp. fennel seed
• 1 tsp. cinnamon
• Pinch saffron (optional)
• 2 finely grated zest and juice limes
• 2 cloves garlic crushed
• Sea salt
• 150 ml light poultry stock
• 2 tbsp. chicken schmaltz or olive oil
• Small bunch coriander
• Sour cream to serve
