I have just recently found out how wonderful eggplant ia. I have been trying it in many different ways and created this recipe. It is very simple to make.
Ingredients
- 1 pound eggplant (peeled, sliced 3/4 inch slice)
- 1 can (398 ml) diced tomatoes (with chili and lime)
- 1 cup sweet onions, sliced
- 3 large garlic cloves, chopped
- 1 bay leaf
- 1/2 teaspoon chili flakes (or more)
- 1/2 cup parmesan cheese, grated
- salt and pepper, to taste
