Lamb hotpot – Delicious and Real

Ingredients

• oil
• 1 onion (Finely Chopped)
• 2 cloves of garlic (Finely Chopped)
• 1 courgette (Diced)
• 500 g diced lamb (You can substitute the diced lamb with minced lamb if you prefer)
• 400 g tin of chopped tomatoes
• 1 stock cube
• 200 ml boiling water
• 2 sprigs rosemary
• 500 g potatoes (Peeled and Halved Lengthways)
• 2 tsp cornflour
• 250 g broccoli (Trimmed)
• 400 g spring greens (Finely Chopped; Bigger stalks removed)
• drizzle of olive oil
