Ingredients

  • 2 ¼ teaspoons active dry yeast
  • ¼ cup shortening
  • 2 large eggs
  • 1 ½ cups warm water
  • 1 cup evaporated milk
  • ¼ cup confectioners’ sugar
  • 7 cups all-purpose flour
  • 1 quart vegetable oil
  • ½ cup white sugar
  • 1 teaspoon salt
  • Dissolve yeast in warm water until completely dissolved in a large bowl. Add in the evaporated milk, eggs, sugar & salt; blend well.
  • Now, add in 4 cups of flour; mix well & beat for several minutes, until completely smooth. Add in the shortening & then the leftover 3 cups of the flour. Cover & let chill for up to a day.
  • Roll the dough out approximately ⅛” thick. Cut into 2 & ½” squares. Fry in hot oil (at 360 F). Once fried, place them on paper towels and drain.
  • Shake the confectioners’ sugar on hot beignets. Serve immediately & enjoy.
