Beignets Just Like Those at Cafe Du Monde - No Fail Recipes
Beignets are deep fried fritters, covered in powdered sugar and sometimes filled with fruit or pastry cream. Similar to doughnuts but better.
Ingredients
- 2 ¼ teaspoons active dry yeast
- ¼ cup shortening
- 2 large eggs
- 1 ½ cups warm water
- 1 cup evaporated milk
- ¼ cup confectioners’ sugar
- 7 cups all-purpose flour
- 1 quart vegetable oil
- ½ cup white sugar
- 1 teaspoon salt
- Dissolve yeast in warm water until completely dissolved in a large bowl. Add in the evaporated milk, eggs, sugar & salt; blend well.
- Now, add in 4 cups of flour; mix well & beat for several minutes, until completely smooth. Add in the shortening & then the leftover 3 cups of the flour. Cover & let chill for up to a day.
- Roll the dough out approximately ⅛” thick. Cut into 2 & ½” squares. Fry in hot oil (at 360 F). Once fried, place them on paper towels and drain.
- Shake the confectioners’ sugar on hot beignets. Serve immediately & enjoy.
