Ingredients

• 2 tbsp Urban Meadow butter
• 2 tbsp Urban Meadow extra-virgin olive oil
• 1 Large, chopped onion
• 5 Large Yukon Gold potatoes, peeled and cut into 1/4-inch cubes
• 1 Shredded carrot
• 2 lbs Cooked corned beef, cubed
• 2 tbsp Fresh chopped parsley
• 1/2 tsp Ground black pepper, to taste
• 1/4 tsp Dried thyme leaves
• 1 Pinch of Urban Meadow salt, to taste
