Ingredients
- 325 g gluten-free plain flour
- 50 g cocoa powder, plus extra for dusting
- 250 g castor sugar
- 250 g light muscovado sugar
- 2 tbsp gluten-free baking powder
- 2 tbsp cider vinegar
- 400 ml water
- 2 tsp vanilla extract
- 3 tbsp raspberry jam
- For the icing:
- 400 ml coconut cream
- 400 g dairy-free plain chocolate
- A small edible gold leaf
- You will need:
- 2 x 20 cm sponge tins, oiled and lined with baking paper
