Michigan Sour Cherry Pie - Pioneer Sugar

Ingredients

• Pastry for a double crust 9-inch pie
• 2 ¼ cups Flour
• 4 oz Lard, chilled
• 1 oz Unsalted butter, chilled
• Pinch of salt
• 56 tbsp Ice water
• 4 cups Sour cherries, pitted
• ¼ cup Tapioca
• 1 cup White granulated Pioneer Sugar
• ½ tsp Almond extract
• 1 Egg, beaten (to brush on pastry)
