  • 1 tsp saffron threads (steeped in 2 tablespoons warm water)
  • 1 bay leaf
  • 1 tsp dried thyme
  • ½ tsp salt
  • ½ tsp black pepper
  • Zest of 1 orange (for a classic Provençal touch)
  • ¼ kg firm white fish fillets (cod, sea bass, or halibut), cut into chunks
  • ¼ kg mussels, scrubbed and debearded
  • ¼ kg clams, cleaned
  • ¼ kg shrimp, peeled and deveined
  • ¼ kg squid, sliced into rings (optional)
  • 1 egg yolk
  • 1 tsp Dijon mustard
  • 2 cloves garlic, minced
  • ½ tsp saffron-infused water
  • ½ tsp smoked paprika
  • ¼ cup olive oil
  • 1 tbsp lemon juice
  • Salt, to taste
