  • 10 red potatoes , cut into big chunks
  • 1 pound beef, , cut into 1 inch chunks
  • 5 carrots, peeled and cut into large chunks
  • A few sprigs of thyme
  • 1 white, or yellow onion, cut into large chunks
  • Fresh parsley, for garnish
  • 1 to 2 tablespoons avocado oil
  • 16 ounces mushrooms, washed and quartered
  • 3 tablespoons butter
  • black pepper, to taste
  • 3 tablespoons white rice flour
  • 1 teaspoon kosher salt
  • 3 cups low sodium beef broth
  • salt and pepper
  • 4 cloves garlic, minced
  • 4 stalks celery, cut into large chunks
