Beef-Enchilada Casserole - Look Local - Celebrating Community

Ingredients

• 1-1/2 to 2 pounds of extra lean ground beef
• 1 crushed garlic clove
• 4 to 5 tomatoes, chopped and stewed
• 6 oz. tomato or enchilada sauce
• 2 tsp olive oil
• 3 tbsp diced onion
• Salt to taste
• Coarsely ground pepper
• 6 to 8 jalapenos diced
• 12 soft corn tortillas, cut in 1/4 (triangles)
• 3 cups shredded cheddar cheese
• 1/3 cup fresh cilantro chopped
• 1/3 cup green onions finely chopped
• 1 cup of grated jack cheese (or parmesan)
