  • 1 oz Pancetta - diced
  • 1 oz Red onion - diced (medium)
  • 1/2 lb Fennel, bulb only - washed, sliced, And cut into strips
  • 3 Garlic cloves - minced
  • 1 tablespoon Minced fresh sage leaves
