- FESTIVE JERK-INSPIRED RUB
- 3 cloves of garlic
- 3 shallots
- 3 scotch bonnets
- 3 fresh bay leaves
- 1 tablespoon ground allspice
- 1 level tablespoon ground cloves
- 1 whole nutmeg, for grating
- ½ a bunch of fresh thyme (15g)
- 1 bunch of fresh chives (20g)
- olive oil
- 1 tablespoon runny honey
- 3 tablespoons malt vinegar
- 100ml golden rum
