Ingredients

• 4 olive oil
• 1 red onion, finely chopped
• 2 garlic cloves, crushed
• 1/4 tsp chipotle chilli flakes
• 800 g can chopped tomatoes
• 2 tsp paprika
• 5 g caster sugar, (1 tsp)
• 6 tbsp mascarpone
• 600 g chicken breast, sliced into strips
• 300 g penne pasta
• 70 g cheddar cheese, grated
• 50 g mozzarella, grated
• 1/2 small bunch flatleaf parsley, finely chopped
