• 1 15.5 ounce can store bought enchilada sauce (green or red) ((I used 2 small or 1 large can) )
• 1 15.5 ounce can refried black or pinto beans
• 1 cup pepper jack cheese
• 1 cup mexican blend cheese
• 8 scallions, white and light green parts, thinly sliced
• chopped fresh cilantro leaves
• tortillas
• 1/4 cup sour cream
