Ingredients

• 1 celery root (about 1 ½ pound)
• ½ cup crème fraîche (at room temperature)
• ½ cup white wine vinaigrette (3 to 1 oil to vinegar ratio)
• 1 teaspoon freshly squeezed lemon juice
• 4 stalks celery (halved lengthwise then sliced crosswise)
• 1 cup toasted walnuts (chopped)
• 1 cup black currents
• ½ cup chopped flat leaf parsley
• 1 teaspoon kosher salt
